First, check the lower left corner of the launcher to see what version you have, because if it's quite recent, this idea doesn't make sense. I can't swear this will solve the problem, but it's a logical next step. minecraft and try reinstalling the launcher to make sure you have the latest version. You could try loading that installation to reset its date, and then play your usual installation afterwards to make sure it's newer. The only other thing I can think of is if the file date on your 1.12.2 installation somehow got screwed up and the launcher thinks it's newer than "today". I tried a quick-n-dirty bug search for "default version" in the launcher, and didn't turn up anything relevant, either. I don't see any settings to configure a specific default installation.
